Combine first 4 ingredients in the bowl of a stand mixer. Mix on medium with the paddle attachment until all ingredients are combined and smooth.
Line a cookie sheet with parchment paper. Using a teaspoon, measure out portions of dough and roll into a ball. Flatten balls into patties on parchment paper.
Place cookie sheet in the freezer for 1 hour or until patties are firm enough to handle.
Melt chocolate chips in a glass bowl in the microwave. Stir until smooth. Coat each peppermint patty in chocolate and put back on parchment paper. Decorate as desired. Place cookie sheet back in freezer or fridge until chocolate is set. Move to an airtight container and store in the fridge for up to 1 month.
I take no responsibility for how many of these copy cat York Peppermint Patties you will consume. I do take responsibility for how much you'll enjoy them.
