Instructions
  1. Preheat oven to 375 degrees. Grease cookie sheet and set aside.
    In a large mixing bowl, combine oil, sugar and molasses.
    Add egg and mix well.

  2. Combine dry ingredients in a separate bowl and add to sugar mixture. Mix well. Cover and refrigerate for 4 hours or until easy to handle.

  3. Shape dough into 1 inch balls, roll in sugar and place on greased cookie sheet. Bake for 7-9 minutes or until tops are cracked and edges are set.
    When done, move to wire cooling racks.


Recipe Notes

These cookies are chewy and soft and taste like gingerbread. Perfect for the holidays or a Sunday. Store in a container for up to 1 week or freeze for later.chewy molasses cookies
